    Fireworks Cupcakes that Pop!

    Fourth of July cupcakes. When I Googled it I found these two sites.

    The best part is the chocolate actually pops and fizzles in your mouth! Chocolate Pop Rocks! Follow the directions below or simply scroll down and print out the directions at the bottom of this post.

    Here’s what you will need to make them.

    Pretend the Wilton Decorating Gel is really Betty Crocker Gel Food Colors. The little bottle of decorating gel won’t turn white cake batter to red. It will turn it pink. And the blue will turn your cake batter green. Luckily, I had some blue Betty Crocker gel leftover from another baking project. But alas the red was gone so I had to settle for pinkish – red, white and blue cupcakes.

    If I had followed 1 Fine Cookie’s directions for layering the batter using condiment bottles the cupcakes would have had even stripes. I was lazy and just spooned the batter into the liners. I think they look like they’re smiling. Happy cupcakes:)

    I suggest making the chocolate fireworks first. I used the fireworks template from Lady Behind the Curtain’s site. Thank you, Lady Behind the Curtain for teaching me this cool new trick to making chocolate toppers for cupcakes.

    Print out the template and trace over the design with a marker. Tape the template to a cookie sheet and cover it with wax paper. Place the cookie sheet in the freezer for at least ten minutes while you melt the chocolate.

    Melt the chocolate in the microwave on 50% power for twenty-second intervals – stirring in between. The chocolate will melt as you stir. Pour the chocolate into a condiment bottle. You must work fast because the chocolate will solidify. Work on one firework design at a time. Ready… Set… Go!

    1. Trace the firework lines with the chocolate. Don’t make it too thick because you’re going to layer the chocolate.
    2. Open one packet of Pop Rocks.Sprinkle the Pop Rocks over the chocolate. QUICKLY cover them with another layer of chocolate following the template. Pop Rocks lose their pop when they hit air.
    3. Place the stick in the middle and add extra chocolate to keep it in place.
    4. Sprinkle any other decorations on the fireworks. I used yellow dust and blue beads.
    5. Follow steps 1-3 for the next two fireworks designs.
    6. Let the cookie sheet sit on the counter while the chocolate hardens. I did not put it back in the freezer because of the Pop Rocks. Moisture makes them pop. I learned that from 1Fine cookie. Thank you.

    Follow the directions on the cake mix and separate the batter into three bowls. Color them red and blue or pink and blue as I did.

    Spoon the batter into the cupcake liners or be a perfectionist and use a condiment bottle to put exactly the same amount of batter into each liner. Your choice. I would suggest filling the cupcake liners only 3/4 of the way like almost all recipes say to do. Do I ever listen? Nah. I like my cupcakes BIG! Please take note… new oven! I was very excited to set the temperature to 350 degrees and the timer for 20 minutes and all turned out perfect. No more guestimating! Yipee!!!

    Pretty in pink… I mean red. Let the cupcakes cool and then cover with your favorite icing.

    Decorate the cupcakes and place the toppers in the center. It’s a celebration in your mouth. If you make these cupcakes upload a picture to my Facebook page. I’d love to see them. Yellow or white chocolate would also look pretty for the fireworks design.

    These cupcakes are not only striking in appearance but they also pop in your mouth!

    Ingredients

    cupcake

    • 1 box White Cake Mix
    • 1 jar White icing (I used cream cheese icing.)
    • 1 packet Blue food coloring gel
    • 1 packet Red food coloring gel

    cupcake (Optional)

    • 1 packet Sprinkes or Shimmering Dust (Decorate the top of the cupcake.)

    Fireworks

    • 1 bag Red Candy Melts Chocolate
    • 3 packets Pop Rocks Candy (I used the Strawberry Flavor.)
    • 14 small Lollipop sticks
    • 2 Template Fireworks Design (Print from a computer and trace with a dark marker. )

    Fireworks (Optional)

    • 1 packet Yellow Shimmering Dust

    Directions

    Tape the fireworks design to a cookie sheet and cover with wax paper.

    Place the cookie sheet in the freezer for ten minutes.

    Melt the chocolate in a microwave for 20 second intervals on half power - stirring in between. Then pour the chocolate into a condiment container.

    Take the cookie sheet out of the freezer. You must work fast. Use the condiment container and trace the lines of one firework design. It doesn't need to be thick because you're going to add more layers. As soon as the lines are all traced on ONE firework design, sprinkle the pop rocks over the chocolate. Quickly cover the pop rocks with more chocolate. This keeps them from losing their pop. Place the stick in the middle and cover it with chocolate to make it stay. Then move on to the next firework design. Leave the cookie sheet on the counter while the chocolate hardens.

    Split the batter into three bowls. Add the red food coloring to one bowl and the blue to another.

    I filled my liners to the top and only had enough batter for 12 cupcakes. I recommend only filling the liners up 3/4 of the way.

    Bake for 18-22 minutes - let cool and top with icing.

    Decorate and add your Fireworks. The Pop Rocks really pop and fizzle in your mouth. Awesome!
