Olives! The World’s Greatest Olives!
This recipe came from The Food 52 Cookbook. I say the olives are the world’s greatest. They call the olives: Olive all ‘ Ascolana Ingredients: 1 tsp. Mustard Seeds 1 tsp. Rosemary 1 Clove Garlic 1/4 tsp. Red pepper flakes 1/2 cup Goat Cheese (room temp.) 1 large jar of Green Olives Small bowl of flour Small bowl with one large egg (beaten) Small bowl with 50/50 Panko Crumbs and Parmesan Mix together the garlic, mustard seeds, rosemary and red pepper flakes. Add the cheese. Refrigerate the mixture for twenty minutes. Then stuff the olives. We tried stuffing a few mushrooms too. Okay, not “we”, Eric stuffed the mushrooms. I took…

Zoku Pops!
This is the story of two adorable teenagers and their popsicle making adventure. It began with a mother-daughter shopping trip to Brookstone. The Zoku Quick Pop Maker caught our eye and brought us back to the days when we used to pour orange juice into plastic containers, stick them in the freezer and wait… and wait… Feeling nostalgic and grasping for every opportunity to bond before Arielle leaves for college I bought the Zoku and the book of recipes. Arielle and Kai chose to make the watermelon pops first. They blended the watermelon. There wasn’t quite enough watermelon juice after it was strained. But wait… where did all the leftover watermelon go? “Kai!” Into Kai’s mouth that’s where. Teenage…

Delightful Strawberries
The wonderful thing about long car rides is it allows for endless conversations about anything from the latest book we’ve read to a recipe we want to try. I sat and listened while Eric described his idea for what I’m calling – Delightful Strawberries. I’m all for Eric trying out new recipes. They’re good for my taste buds and good for this blog. It’s a win – win. Monday night he began hulling strawberries and I grabbed my camera. While the Delightful Strawberries turned out to be absolutely scrumptious… the final pictures of them didn’t turn out well. Here’s what happened. I decided to wait until the chocolate hardened to take the last shots. Eric, Kai and I turned on Lord…

Summertime Sangria
It’s summer, and if you live in Florida, it’s HOT. Personally, I love the heat. And I love sitting on my lanai after the afternoon rain, sipping on sangria with a book in my hand. There’s no better way to remind myself that I live in paradise. Eric taught me how to make his famous sangria. Once again it worked out perfectly. He did the chopping and mixing and I took pictures. Teamwork is so much more fun than cooking alone. I was sampling an old batch of sangria while we worked. If the pictures are a little crooked… now you know why. If they’re the best you’ve ever seen… now you know…

Graduation Cupcakes
The picture above is what the cupcakes should look like. They are totally worth the effort of making them. Yummy! You can read all about my mistakes during my first baking attempt or simply scroll down and print out the recipe. MY First Try: What do you get when you add graduation cupcakes and the Wizard of Oz… “I’m MEL… TING!!!” I goofed again. Twice. Okay maybe three or four times. I had good intentions. I thought I’d add the graduation cap decoration to Arielle’s favorite cupcake. Easy? Well, I made one mistake after the next and by the end of the evening I was snapping away trying to capture…

Apple Butter Cupcakes
I grew up in Lancaster County, PA where apple butter was in everyone’s refrigerator. Apple butter and Turkey Hill sweet tea. When I found this in my grandmother’s recipe box I had to try them. I’m glad I did because… oh, are they scrumptious! I was going to add a caramel topping but Eric made a face. He wanted me to stick with my original idea of using a streusel topping. I’m sure I could have made my own streusel but then I found a box mix. Why not? Ready made streusel equals quick and easy which is perfect when your May calendar looks like there’s no time to breathe. First, preheat the oven to…
