Mini Pots of Gold
I found this recipe in a magazine at the supermarket called PIL Cookbooks, Irish Favorites. My original idea was to make brownie bowls and use yellow cake balls for the gold. Then I figured I better stick to the recipe, otherwise I may be up all night baking. Turns out that was a good decision as these pots of gold were super easy and delicious. St. Patrick’s Day Extravaganza
I’m gearing up for a St. Patrick’s Day extravaganza week. Five straight days of baking, decorating and laughing at all my mistakes. Post number one will begin tomorrow…. late afternoon. I move like a turtle in the kitchen. If anyone has any recipe suggestions and you want me to try it first – leave a comment. I love a challenge. Sometimes. Eggplant Ricotta Bake
Finally, I made a new meal that turned out well and Eric loved. I wish I could say my family loved it as well but Arielle was out with friends and Kai wouldn’t dare try eggplant or ricotta cheese. Kai sat with us for dinner anyway and ate his microwaved macaroni and cheese.. right out of the container. No plate. Change
Today I learned that dress down day in middle school should really be called teacher beware day. Wow! The energy in every class was difficult to keep balanced. Amazing how the slightest change in a routine (uniforms) can make students react uniquely to their eniviroment. But isn’t that necessary in every aspect of life? Changes in a routine adds color and newness to what can become a mundane exhistance. With change comes creativity. And oh, were those middle school students creative today! Energy Bars
I’m still on my healthy kick since baking and eating way too many sweets around Valentine’s Day. I found a website, thanks to Pinterest, that shows how to make energy bars. Lately, I’ve been needing extra, extra energy to get me through my days teaching middle school math. I spent last week factoring trinomials. Soon I’ll have to face graphing quadratic equations. Still, I have to admit I’m having fun – and math was never my thing. Reading was, so I couldn’t resist today and had to pull out my Kindle before lunch and read the first few pages of Number The Stars to the sixth graders. Oh they rolled their eyes but…
