A Different Kind of Chip
Potato chips are awesome. A crunchy Cape Cod chip, onion dip, a chick flick and I’m smiling. I was hesitant when I first saw these kale chips. Kale was the dark leafy lettuce looking stuff I never touched at the grocery store. I remembered reading how much parrots love to eat it. Kale chips? I wasn’t so sure. Then I took a bite. Yum! If you want to cut calories and still crave a crunch – try kale chips. Turn your oven to 275 degrees. If your oven is twelve years old then you’ll have to turn it to 300-ish degrees and cross your fingers. Welcome to my world. Spread the kale on a baking sheet and drizzle…

Can You See Them?
Can you see how they’ve grown into young adults? Hear how he plays the piano and see how her smile lights up a room. When you knew them she talked incessantly. Still does. He blazed his own path. Still does. Remember when they would sing carols for you and all your friends. She on the violin and him with all his faces making the audience laugh. Can you see them now? Track, musicals, honor roll, steel drums, jazz band and friends filling our home laughing and teasing one another. He’s taller than me. She’s driving. Did you know you only had a short time with them? Did you think about it? I…

The Bubble Rule
We sat in the waiting room. Me and a red-headed stranger. It was clear from our stiff shoulders and crossed arms that both of us were having trouble relaxing. Yet, we were surrounded by the soft sounds of a flute and the gentle dripping of a waterfall. The room was serene – perfect. We joked about how we never “do this.” It was almost like we were apologizing to each other for the fact that we were sitting at a spa waiting to be pampered. My name was called and in I went for my second facial ever in my life. Eric had bought me the gift certificate last May and…

Easter Cake or Osterfladen Mit Reis
Easter Cake or Osterfladen Mit Reis I was sent a recipe from a friend in Switzerland. She said she makes Osterfladen mit Reis every Easter. I learned enough German in high school to understand mit reis meant – with rice. I figured I’d give it a try. And then I asked her what a vanilla bean is. Yeah, I’ve only ever used vanilla extract. I guess that’s what happens when you eat the same foods for years and years. After waking at five and teaching all day, I found myself standing in the grocery aisle wondering just what type of filo dough to buy and how many ounces were equal to 250 grams of milk. I knew I was…

Chocolate Peanut Butter Pretzels
Chocolate Peanut Butter Pretzels: Surprise! I’m posting two treats in one day and it has absolutely nothing to do with the fact that today is the last day of the month and I’m trying to reach the readership goal I set for myself with the blog. Nope, not at all. My chocolate covered pretzels were a big hit at the kids Halloween party so I made some for spring. I happened to have the peanut butter jar nearby which got me thinking. What if I covered the pretzel in peanut butter and then dipped it in chocolate? Wow! Why didn’t I think of that before? They were awesome! The pretzels are…
