    Girl Scout Cookie Brownies

    Girl Scout Cookie brownies! Thin Mints on the left and Samoa on the right. They’re easy to make and incredibly delicious! My only regret is that I didn’t buy a box of Tagalongs to try. All you need is a brownie mix and your favorite cookies. Spread half of the brownie mix in the pan. Add cookies. Cover with more batter and a cookie crumble topping. Next time I’ll add the entire cookie for a stronger coconut taste. The Thin Mints brownies were very minty!     Easter Cookie Nests

    Of course I had to try making my pots of gold into Easter baskets. When I couldn’t get any kind of candy basket handle to stay up for more than five seconds I dubbed them nests. Let me know if you try these and find something that works. Possibly if the nests/baskets were dipped in chocolate then the chocolate would hold the handle in place… once it dries. That would mean having a lot of patience which I tend to have for writing novels but not cooking. They’re a fun dessert for a party or an economical treat for a classroom of students.     Pizzelles!

    Every Christmas my grandfather made pizzelles. I can still picture him carrying containers full of cookies up the basement stairs. “Mangia!” he’d say in his booming Italian voice. Then he’d hand out cookies to everyone. I miss him. So every Christmas I make pizzelles in his honor. This year I decided to experiment a little. It actually turned out well – much better than my Epic Fail Fall Cake. Whew! I decided I would create different fillings to sandwich in between two pizzelles and have Eric and Arielle taste test them to see which was their favorite. Notice I wrote Eric and Arielle… not me.     Super Easy No Bake Cookies

    Ingredients: 1/2 Cup Milk 1/4 Pound Butter 2 Cups Sugar 3 Tab. Cocoa (unsweetened) 1/2 Cup Peanut Butter 1 Tsp. Vanilla 3 Cups Quick Oats (I used Quaker 1 min. Oats) Step one: Melt the butter, milk, cocoa and sugar and bring to a boil for one minute. Step two: Remove from heat and add the peanut butter and vanilla. Step three: Slowly stir in the oats. Step Four: Spoon the cookies onto wax or parchment paper. Done! I usually double the recipe and give them away as teacher gifts or bring to cookie exchanges. Please join me on Facebook.
